Executive Chef Marc Cheng’s tenure at Clio Toronto, beginning in January 2022, marks a significant chapter in his already illustrious culinary career. At Clio, Chef Cheng has been instrumental in shaping the Mediterranean-inspired restaurant Margo and the sophisticated late-night lounge, Mr. Vander. His role extends beyond the typical duties of an executive chef, encompassing complete oversight of these dynamic culinary environments within the private members club. His expertise, honed through years of diverse experiences in some of Toronto’s most prestigious kitchens, allows him to infuse a unique blend of creativity, precision, and passion into every dish served at Margo and Mr. Vander.
Before joining Clio Toronto, Chef Cheng’s journey included notable roles such as Chef De Cuisine at Kost Toronto, where he served for seven months, and as Executive Chef at Marked Restaurant for over a year. His tenure at Marked Restaurant was marked by complete menu development, showcasing his ability to source specialty products and implement new ventures. This role also granted him full control over purchasing, from small wares to plateware, and even the design and build of the kitchen. These experiences have evidently contributed to his comprehensive understanding of the culinary industry and his ability to adapt and excel in various culinary settings.
Chef Cheng’s earlier positions further illustrate the breadth of his culinary expertise. He managed all aspects of food production at Trattoria Mercatto for over three years, ensuring consistent results in food cost and labour controls. His duties here were multifaceted, involving menu development, staff hiring, scheduling, and training. His time as Chef de Cuisine at Nao Steakhouse and Sous Chef at Patria Restaurant, Gladstone Hotel, George Restaurant and Verity Women’s Club, highlight his diverse background and ability to lead in high-volume, high-pressure environments. These formative roles have been pivotal in shaping his leadership style and culinary philosophy, which he now brings to Clio Toronto, enhancing the club’s gastronomic prestige and offering members an unparalleled dining experience.
CLIO Toronto offers a unique blend of luxury, connectivity, and cultural enrichment. It’s not just a members-only club; it’s a lifestyle destination where sophistication meets a vibrant community spirit. Whether it’s dining at Margo, enjoying a night at Mr Vander, participating in events at The Rose Bar, relaxing in The Blue Velvet Room, or experiencing cinematic magic in the Theatre Room, CLIO is the epitome of luxury in Toronto.
